ORLANDO, Fla. – The food truck scene in Central Florida is about to get a tasty twist. Pacchioni’s World Inspired Cheesesteaks Food Truck is set to hit the streets, with its grand opening planned for February 23.

Behind this exciting venture is Daniel Pacchioni, who enjoys exploring new flavors and ideas. He’s teamed up with Orlando chef Mike Collantes to create a mouthwatering menu that stands out. Pacchioni shares, “Working with Chef Mike is a dream come true. His restaurant, Soseki, inspired me to pursue this elevated cheesesteak concept. I owe a lot to him for pushing me to start this journey.”
Chef Collantes isn’t just any chef. He earned a Michelin Star in 2022 for his restaurant Soseki in Winter Park and received a Bib Gourmand award in 2024 for another spot, Sushi Saint. Clearly, he knows how to deliver quality dining experiences.
At Pacchioni’s Food Truck, you’ll find various cheesesteaks that take this classic dish around the world. Expect everything from the traditional Philly-style cheesesteak, complete with Cheez Whiz and provolone, to a Jamaican twist dressed with jerk seasoning and homemade curry aioli.
Pacchioni explains, “Whether you’re craving the classic taste or an international spin, our truck is changing the cheesesteak game.” His inspiration comes from family gatherings, especially Sunday dinners with his fiancé’s family from Philadelphia, and global trips with his mom.
There’s also a vision for the future, as plans are in the works for brick-and-mortar locations, though specifics about timing remain under wraps.
The food truck is currently in its soft-opening phase. You can catch it next at Market on Fifth in Apopka on February 23. Its official debut will be during the Faire of The Dog event at 1042 N. Mills Ave. in Orlando’s Mills District.
