This mobile eatery will offer quick and tasty options like burrito bowls, tacos, stir fry, and burgers. Sean Wojtkowski, resident director of AVI Food Systems, revealed that the idea for a food truck stemmed from an attempt to revive two older trucks that had seen better days. However, upon inspection, Wojtkowski opted for a fresh start, partnering with a food truck builder in South Bend, Indiana.

The new truck is designed with the university’s needs in mind. Wojtkowski sketched his ideas, emphasizing the necessity for ample refrigeration. “The builders made it quickly and efficiently,” he noted, happy with how the design came together.

Imagine strolling up to the food truck, jotting down your order on a slip of paper, and handing it through the window. After the cook gets to work, you can simply move to the other end of the truck to pick up your meal.

March will be a trial run for the truck, helping the team identify optimal parking spots and tackle any initial hiccups. One anticipated challenge is the point-of-sale system, essential for taking orders and handling payments, including meal swipes.

Despite these hurdles, Wojtkowski is thrilled about the new dining option. He envisions the truck not only serving students but also becoming a concession stand during football games. This move aims to enhance the overall experience for students, offering them a diverse dining option just steps away from their studies.

As food trends evolve, more university campuses recognize the appeal of food trucks. According to a recent survey by the National Association of College and University Food Services, 75% of students prefer diverse dining options. This data shows a clear appetite for the variety and convenience that food trucks can bring.
