On January 4, 2023, Castillo secured a spot for OG Poke in Portland, and by February 18, it was open for business. He aimed to create a taste of home for locals, serving not just poke but also Hawaiian treats like spam musubi and butter mochi, which are priced at $4 each. The highlight is definitely the fish, available in six marinades plus a daily special, with bowl prices ranging from $18 to $24. Not sure what to choose? OG Poke offers samples, making it easy for customers to find their favorite flavors.

Castillo emphasizes that the key to great poke lies in his marinades. Every morning at 10 am, an hour before opening, he and his team prepare the fish, allowing it to soak in flavor. “You want to build the flavor,” he explains. According to him, poke shouldn’t be complicated and should let the fresh ingredients shine, not be buried under a pile of toppings.

Since OG Poke opened, it has quickly become a local favorite, especially among students at nearby Portland State University. Castillo has built connections with many Polynesian students who say his restaurant reminds them of home. “They feel like they can come in here and feel back home,” he shares.

This kind of community impact is important, especially in the fast-paced world of dining. The restaurant draws in 60 to 90 pounds of fish daily, serving both families and busy professionals looking for a tasty lunch. Castillo’s dedication to quality not only brings a slice of Hawaiian culture to Portland but also creates a welcoming space for customers seeking connection and authenticity.

Following trends in the food industry, the poke bowl has gained popularity beyond Hawaii.
