At Burgatory, you can try The Triple B burger, priced at $18.50. This burger is made with all-natural bison from Montana, topped with queso, bacon, tomato, and jalapeños, all on a pretzel bun. They source their bison from AF Wendling, a major distributor in West Virginia. Meredith Feiler, a spokesperson for Burgatory, highlights the health benefits of bison. She mentions that it’s best cooked to a pink center for flavor.

Other spots in the area are also serving up unique bison dishes. At Urban Tap, the bison burger comes with a garlic aioli and jalapeño cream cheese, for $19.50. Stack’d allows you to build your perfect burger, with the 1/3 lb. bison option costing $15.75.

In the Cultural District, The Warren Bar and Burrow features a bison smash burger with two patties, Swiss cheese, and black garlic aioli for $19. Nearby, Carmella’s Plates & Pints offers a bison meatloaf, which has become a standout dish. Owner Carmella Salem shares that once customers try bison, they often fall in love with it. “It’s comforting and unique,” she says.

Statistics show that bison meat is not only healthier but also sustainable. According to the National Bison Association, bison farming has minimal environmental impact compared to beef cattle. Bison produce less methane and require less water, which is crucial as climate concerns rise.

Social media trends also reflect this bison boom. Instagram posts of perfectly grilled bison burgers are gaining traction, making people curious to try this leaner meat option.
