In the heart of Kailua, Lilikoi Kitchen is redefining island comfort food. Chef-owner Bianca Alsip-Freeny has a knack for crafting delicious dishes from scratch, blending tradition with innovation.

Alsip-Freeny also runs Tailor Made Custom Catering, showcasing her flair for cooking. On a recent episode of Sunrise, she highlighted some favorites like lilikoi pancakes, garlic shrimp, duck fat loco moco, and ribeye with housemade chimichurri sauce. Each dish reflects her commitment to quality, using homemade sauces and dressings.

Her love for cooking ignited in childhood, making meals with her great-grandmother and father. “My great-grandmother was a chef, and my father loved experimenting in the kitchen,” she recalls. Alsip-Freeny trained at the Art Institute of California-Los Angeles and has honed her skills at top restaurants in Los Angeles, Las Vegas, and Hawaii. She has also catered for sports teams and special events.

In 2019, she launched Tailor Made Custom Catering, and in 2023 opened Lilikoi Kitchen as a casual breakfast and lunch spot on Uluni. This year, she added dinner service and created a dine-in experience in Kailua Village Shops, further expanding her culinary reach.

What sets her apart? Alsip-Freeny pays careful attention to each dish and event. With multiple concepts under her belt, she enjoys the challenge of crafting diverse menus that cater to different tastes and occasions. This variety not only keeps her creative but also allows her to connect with a wide audience.

According to a recent report by the National Restaurant Association, scratch-made meals are becoming increasingly popular. Many diners prefer dishes made with fresh ingredients rather than pre-packaged options. This trend aligns perfectly with Alsip-Freeny’s vision.
