Savoring Life: Culinary Adventures with The Food Guy at Petite Vie

In recent years, there’s been a noticeable rise in French cuisine in Chicago, and this time, it’s reaching the western suburbs too. Chef Paul Virant, known for his previous venture, Vie, has opened a new French brasserie called Petite Vie in Western Springs.

For nearly two decades, Vie was a go-to spot for fine dining in the area until it closed due to a lease dispute. Instead of giving up, the owners found a new place nearby and created Petite Vie, filling a gap for French food in the suburbs.

Petite Vie is conveniently located close to the train station, making it accessible for both locals and visitors. Virant brings his passion and skills to the brasserie, focusing on classic French dishes.

“I have a strong background in French cooking, and there just isn’t much of it around here,” Virant says. He believes there’s been a resurgence of French cuisine in Chicago, and he wants to be part of that movement.

At Petite Vie, you can enjoy delicious dishes like:

  • Wild Burgundy Snails: Braised with garlic, parsley, lemon, and a touch of Pernod.
  • Lyonnaise Salad: Made with curly frisée, soft-boiled eggs, crispy pork lardons, and crunchy croutons.
  • Country Pâté: A savory blend of pork and chicken livers wrapped in bacon with dried fruit and pistachios.
  • Trout Almondine: A classic dish with roasted almonds and sautéed garlic, served with green haricots verts.
  • Beef Bourgogne: Comforting beef stew braised with vegetables, served over creamy celery root puree.
  • Ouefs Mimosa: Inspired by a New Orleans recipe, featuring a fresh crab salad.

To complement the food, the brasserie offers handcrafted cocktails focusing on vermouths and spritzes. For dessert, you can find treats like profiteroles and rich chocolate soufflé.

Virant is excited to return to his roots and is dedicated to reviving French brasserie dining in the area. If you’re looking for a taste of classic French cuisine in the suburbs, Petite Vie is a must-visit.
