Andrea and John Jaskowiak started Jasko’s Farm to promote a healthy lifestyle for themselves and their community. “We want to be healthy and give back,” Andrea explains.

Andrea, a respiratory therapist, and John, an Army veteran and nurse, sell their products every Saturday from 9 a.m. to noon at the Cabrini Farmers Market in St. Francis Cabrini Church’s parking lot.

At their booth, you’ll find organic, farm-raised eggs. Andrea shares that their chickens and geese roam freely, producing what she calls “high-quality eggs.” “They’re free from pesticides and other harmful additives,” she emphasizes.

The couple previously lived in East Texas, where they observed many egg farms crammed with chickens kept in buildings away from sunlight. Andrea pointed out, “Those chickens miss out on natural sunlight, grass, and bugs.” Their chickens, however, enjoy a vibrant diet filled with flowers, bugs, and even healthy dandelions. “We even give them red pepper flakes for better gut health,” she adds. This approach ensures their eggs are packed with nutrients.

Though they focus on eggs, the Jaskowiaks plan to grow fresh produce like tomatoes, carrots, cucumbers, and okra for the market, although they won’t be growing corn due to limited land. They also offer tasty jellies, jams, salsas, and relishes. “People love my recipes because they ask for them,” Andrea shares. Everything is made without artificial ingredients, and she takes pride in creating healthy white bread and homemade applesauce.

This approach reflects a growing trend toward healthier food choices. According to a recent survey by the Food Marketing Institute, 78% of consumers are trying to eat healthier, which drives demand for local, organic options. As the farm-to-table movement gains momentum, businesses like Jasko’s Farm are essential in meeting this desire.
