Rita Garrity is facing some tough competition this year. For 15 years, she has competed in canning and knitting at the Minnesota State Fair. Last year, her orange marmalade won her a blue ribbon.

This summer, Rita decided to sharpen her skills. She attended a class at Bachman’s Floral, Home & Garden in Minneapolis, eager to learn more about food preservation. The community has grown, and so has the competition. “There’s a lot more interest now than when I started in ’89,” Rita said. “I don’t know if I could win like I used to. The talent is impressive.”

Food preservation has many benefits. For some, it means saving money and taking control of their food supply. Rising food prices in April had many, like Gloria Cosper from St. Paul, investing in canning equipment to cut costs. It’s also a great way to extend the life of fresh summer produce.

Becky DeLaCruz, a certified food preservation consultant, shared valuable insights during the class Rita attended. “We waste so much food in America. Learning preservation techniques can really help.” She demonstrated methods for canning, displaying jars filled with preserved foods. Attendees eagerly took notes, absorbing every tip.

DeLaCruz highlighted another important reason for preserving food: preparing for unexpected supply chain issues. “Keeping food in reserve can be a real lifesaver,” she said.

The rise in food preservation interest reflects a larger trend. According to a recent survey by the U.S. Department of Agriculture, home canning has increased by nearly 50% since the pandemic began. More people are turning to these skills not just for fun, but out of necessity.

Overall, food preservation is becoming a valuable hobby. It empowers individuals to reduce waste and reconnect with their food sources. As more people join the movement, the competition will only get fiercer. But for enthusiasts like Rita, it’s all about the joy of creating something special and sharing it with others.
