Jie Chen has a strong love for healthy eating. "I’ve been training at the gym for nine years, and I want my food to be clean," she says. After losing her home in last year’s hurricanes, she struggled to find nutritious meals while rebuilding. That’s when she discovered Siesta Poke, a new restaurant that had also closed during the storms.

Once it reopened last November, Chen decided to buy the restaurant. Now, she spends her days crafting delicious, health-focused meals.

At Siesta Poke, customers can create their own poke bowls. Begin with a base of white rice, brown rice, quinoa, or greens. Protein choices include ahi tuna, salmon, shrimp, chicken, red beans, or tofu. Customers can mix in toppings like cucumber, mango, and edamame, then finish with a crunchy topping and a sauce. Each bowl is unique, making it easy to enjoy something different every day.

If you’re craving something sweet, their acai bowls are a must-try. They come with vibrant, fresh ingredients and can be customized to your taste. Recently, Chen also introduced boba tea made from scratch, adding even more variety to the menu. For Chen, finding quality food is no longer a challenge.

"I work here almost every day," she shares. "The food must be high quality because I care about my customers as much as I do about myself."

If you love Italian food, you won’t want to miss a special five-course dinner at Jack Dusty Coastal Cuisine. On May 21, enjoy dishes crafted by Specialty Chef Joe Bennett, paired with fine wines from Palm Bay International. The dinner starts at 5:30 p.m., so mark your calendar!
