Ma Dee Thai Street Food Truck Opens in Bend RV Resort
Just a few weeks before this year’s Northwest Crossing Farmers Market, Atima Guzzonato, known as “B,” noticed a gap in the local food scene. She realized there was no one serving Thai food. With her passion and a little determination, she quickly got the necessary permits and opened up Ma Dee Thai Street Food—a food tent wrapped in bamboo, showcasing her daughter’s colorful chalkboard menu.
On the first day at the market, lines formed outside her tent, and they sold out. The same happened the following week. Recently, Ma Dee celebrated the grand opening of its food truck at the Bend RV Resort.
The truck is parked near the welcome center, inviting food lovers to enjoy meals under shady trees and cozy picnic tables. The atmosphere is perfect, especially as the evenings grow chilly.
The menu offers a delightful selection of Thai dishes. Each meal features fresh ingredients and layered flavors, making it a special treat in Bend’s culinary landscape. Beautifully packaged, the meals come with toppings like green onions, served in bowls sporting the restaurant’s logo.
Among the highlights is the Crispy Pork Noodle ($17). This dish combines crispy pork belly with Thai-style egg noodles, all tossed in a homemade sauce with bean sprouts, cabbage, and crushed peanuts. Another favorite is the Chicken Noodle Bowl ($15), featuring tender chicken over angel hair rice noodles, enhanced with lime, chili oil, and fragrant fish sauce.
For something unique, try the Combo Tom Yum ($18), made with instant ramen, inspired by Thai chef Jeh O Chula’s famous creations. It’s a spicy blend filled with crispy pork, shredded chicken, and quail eggs.
Interestingly, Guzzonato chose not to serve Pad Thai. She believed it might attract customers but later realized it wasn’t necessary. Instead, she happily directs those craving it to established Thai restaurants in the area.
Support from local Thai restaurateurs has been vital for her journey. The owners of Sen Thai Noodles & Hot Pot aided her in sourcing ingredients, which helped her meet supply requirements.
At the heart of Ma Dee is family. Guzzonato’s mother relocated from Thailand to help care for her grandchildren, and together, they share a bond as they whip up delicious recipes. Guzzonato expressed, “It’s meant to be me and my mom’s thing. We just want to do this for fun.”
Her two daughters, particularly baby Delilah, motivate her. “After Delilah’s birth, I realized I could do anything,” she said. The name “Ma Dee” combines parts of her daughters’ names and also translates to “come with the good vibes” in Thai.
