Four years ago, Adan Matul was selling sweet Guatemalan bread, pan de Xela, from a street cart in San Fernando Valley. Today, he and his family run El Sabor Auténtico de Xela, a bustling restaurant and bakery in Chatsworth.
Matul opened the eatery with his partner, Yolanda Barrios, and her daughters, Hellen Rodas and Selena Barrios. They work as a family, bringing the flavors of their hometown, Quetzaltenango, to L.A. Matul says, “Every dish here is a taste of home, the comfort of our parents’ cooking.”
As the Guatemalan community in Los Angeles grows — now over 280,000 strong, a 35% increase in the past ten years — so does the demand for authentic cuisine. This community shift is important, especially amid rising immigration challenges for many Central Americans. “Cultural identity matters,” says Rodas. “Cooking here helps me reclaim mine.”
