Lima’s culinary scene is buzzing with excitement. The Peruvian capital has recently secured two spots in the top 10 of the 2025 “World’s 50 Best Restaurants.” Among them, Maido clinched the coveted number one position.
This prestigious award ceremony took place in Turin, Italy, showcasing the best of innovative fine dining. Maido, led by chef Mitsuharu “Micha” Tsumura, jumped from fifth place last year to the top this year. The restaurant specializes in Nikkei cuisine, which beautifully blends Japanese techniques with vibrant Peruvian ingredients. According to the awards organization, this fusion creates a culturally rich and modern dining experience.
Tsumura expressed his passion during the award acceptance, saying, “I think gastronomy — food and hospitality — can do amazing things. They can make dreams come true.”
Following Maido, Asador Etxebarri in Spain earned second place, while Quintonil from Mexico City took third. Returning to the list, Diverxo in Madrid came in fourth, with Copenhagen’s Alchemist rounding out the top five.
Bangkok made waves this year, with six restaurants on the list, highlighted by Gaggan in the sixth spot. Tokyo’s Sézanne ranked seventh, and Paris’s Table by Bruno Verjus took the eighth place. Lima’s Kjolle and Don Julio from Buenos Aires secured ninth and tenth positions, respectively.
Interestingly, New York’s Atomix remains the only U.S. restaurant within the top 50, placing twelfth while also winning “Outstanding Hospitality” at the James Beard Awards. Further emphasizing Bangkok’s culinary prowess, Potong debuted in 13th place after opening in 2021, featuring a unique Thai-Chinese tasting menu.
This year, London’s Ikoyi earned the “highest climber” award, jumping 27 places to number 15. Ikoyi offers a menu inspired by sub-Saharan West Africa, with smoked jollof rice as its signature dish.
The annual list is crafted from votes from the World’s 50 Best Restaurants Academy. This group includes 1,080 experts from around the globe, such as food writers and chefs. A restaurant can only snag the top spot once, after which it enters an elite “Best of the Best” pool.
Recognized names in this exclusive group include Noma and Eleven Madison Park, illustrating the high standards of worldwide gastronomy.
