Inspired by the hulder, mystical wood nymphs from Norwegian folklore, Bareksten adds a touch of magic to his gin-making. This blend of flavor and story is what sets Nordic gins apart—from the intriguing ingredients to the tales behind them.

The gin scene in Scandinavia has exploded in recent years. In Sweden alone, there are over 60 distilleries, all using local flavors. These local influences create bold, clean gins that reflect the unique character of the region. I had the chance to try a floral pickled-plum Martini at Fotografiska, one of the standout offerings featuring Stockholms Bränneri gin.

“If someone had told me two decades ago that gin would be distilled right in the heart of Stockholm, I wouldn’t have believed it,” says Nadja Karlsson, a drinks expert I met at the Spritmuseum’s gin exhibit. These distilleries showcase the exciting shift toward using local ingredients, much like the chefs of New Nordic cuisine.

Not only has the popularity of gin surged, but drinks like Gin and Tonic have also become household staples in the Nordic region. It’s an easy drink to make, perfect for enjoying at home with friends.

Sondre Kasin, who runs bars in New York City, believes that this trend highlights the local flavors in Scandinavian gins. He crafts a unique twist on gin and tonic with his “Gin Sonic,” which replaces soda water with half tonic, showcasing a berry-forward gin complemented by seaweed’s briny touch. Dill sprigs enhance the herbal elements of the gin, creating a refreshing drink perfect for warm days.

In addition to creative cocktails, Kasin also makes a Nordic Gibson, combining Bareksten’s gin with aquavit for an aromatic experience. His house-pickled onions, brined with cardamom and cinnamon, play beautifully with the gin’s complex flavors. It’s a drink that reflects the essence of Scandinavian landscapes: rich, earthy, and full of life.
