The story of Shokkako has come to an end, but what does it all mean? I sat down with Kayla Hendrix, Elijah Trujillo, and Kazuya Makishima, the trio behind the beloved food truck, to explore this question.
These three worked seamlessly together, each filling a crucial role. Trujillo was “the brain,” overseeing the menu and kitchen. Makishima was “the muscle,” dedicated to frying chicken. Hendrix was “the yapper,” connecting with customers and keeping everything running smoothly.
Despite their loyal fanbase, they had to close up shop. Rising costs, burnout, and life changes pushed them to this tough decision.
“Thank you,” Trujillo said simply. “We had so much support from customers and fellow vendors. It was truly a village effort,” added Hendrix.
What did each member enjoy most from their menu? Hendrix loved the Kamikaze fries, loaded with fried Spam and spicy kimchi. Makishima’s favorite was his own invention, the Sisig pork don. And Trujillo was proud of The Mother Clucker, especially its special Bang Bang sauce.
For those looking to enter the food truck scene, Trujillo advised, “Be ready to pivot.” Hendrix emphasized patience, and Makishima suggested viewing it as a long-term commitment. “It’s hard, but you’ll find beauty in the struggle,” he said.
Reflecting on their journey, Makishima shared a highlight: winning first place in the Old Caz “Clash of the Cuisines” competition. “We poured our hearts into that,” he recalled. Hendrix added how thrilling it was to hear customer feedback, especially from those who traveled far just to taste their food.
Hendrix later asked if I knew the meaning of “Shokkako.” It means “a small but certain piece of happiness on a rough day.” That’s exactly what they provided—a little joy in challenging times.
