In the much-loved series “Mad Men,” Don Draper often visited chic restaurants on Madison Avenue in 1960s New York. He enjoyed places with rich mahogany interiors that radiated elegance and sophistication. This vibe is what Fort Worth’s new restaurant, The Mont, aims to capture when it opens this spring.
Owned by Jeff Payne, along with operations VP Jason Cross and executive chef Michaell Duff, The Mont seeks to bring a touch of upscale dining to Fort Worth. Payne shares, “I’ve dreamed of launching a chef-driven concept in this area for a while. We want to create a beautiful dining experience using fresh, seasonal ingredients inspired by our travels and Texas roots.”
Inside, diners will find dark wood paneling and cozy lighting, thanks to Maven Interior Designs. The menu will feature a variety of dishes, including oysters, handmade pasta, and wood-fired fish. Naturally, being in Texas, beef will be highlighted. The team is excited to add a restaurant that fits seamlessly into Fort Worth’s vibrant culinary scene.
One exciting feature is the menu, which will change at least four times each year. Chef Duff explains, “We’ll focus on what’s in-season for our ingredients.” Their culinary approach blends refined traditional recipes with a modern twist.
A standout dish they’re excited about is the beef tartare, which Cross describes as having a fresh take. They’ll use a decadent sabayon sauce made from egg and enhance the steak flavors with truffle vinaigrette. “We want to keep classic flavors but lighten up some ingredients,” he notes. The idea is to create flavors that are intense yet balanced.
This focus on seasonal cooking reflects a broader trend in the culinary world. According to a recent survey by the National Restaurant Association, nearly 70% of chefs are prioritizing locally sourced ingredients in their menus. This shift not only appeals to diner preferences but also supports local farmers and reduces carbon footprints.
As Don Draper once advised, “Make it simple, yet powerful.” The Mont seeks to embody this philosophy, offering a dining experience that’s both elegant and enjoyable.
