Steinecker GmbH is enhancing its partnership with Swiss start-up Food Brewer. After launching a 500-liter bioreactor with Poseidon technology as a proof of concept, Food Brewer is expanding its capacity by ordering a new bioreactor. This move aims to boost the automated production of cocoa and coffee cells, paving the way for larger industrial operations.
This bioreactor isn’t just for cocoa; it also supports yeast fermentation, which helps explore other fermentation processes. Food Brewer’s strong biotechnology background sets the recipe for the fermentation, while Steinecker’s industrial expertise ensures that production can scale up effectively. By 2025, a 2,000-liter bioreactor will be installed, promoting sustainable Swiss chocolate production.
Efficient fermentation requires good circulation under sterile conditions to properly nourish microorganisms. Steinecker’s innovative circulation system improves nutrient distribution, aeration, and reduces costs for large-scale production. This system features sterile valve technology from Evoguard and a gentle aseptic pump, making it effective for both small and large batch sizes.
“In fermentation, it’s vital to supply cells with nutrients. This boosts their growth and health,” explains Alexander Scheidel, Head of Alternative Food Processing at Steinecker. He highlights that for methods like precision fermentation, ensuring even distribution is essential for successful biomass production.
This bioreactor design is particularly advantageous for producers aiming for large-scale output. For tanks of 25,000 liters and beyond, a circulation system is often more efficient than traditional agitation methods. Steinecker customizes each bioreactor to align with specific fermentation needs, providing flexibility for different customer requirements.
While vegan food production through precision fermentation is still emerging, Steinecker’s extensive experience in brewing and dairy processing makes them a valuable partner. “Steinecker merges food manufacturing with bioreactor technology seamlessly,” notes Klaus Kienle, Co-Founder of Food Brewer AG.
Steinecker also emphasizes that their systems can accommodate individual specifications, from standard solutions to tailored designs. With over 150 years in the food and beverage industry, they handle everything from concept development to installation and maintenance, ensuring long-term support for their partners.
As more consumers seek sustainable food options, innovative production methods like those offered by Steinecker will play a crucial role in shaping the future of food production. According to recent industry trends, 42% of consumers are actively looking for plant-based alternatives, highlighting the growing demand for such technologies.
