A new fast-food chain, Fork to Fit Kitchen, is set to open in San Antonio later this year. This brand, founded by Alex Velasco and Jose M. Guerra, has been changing the game since it started in the Rio Grande Valley in 2018. They focus on offering quick, healthy meals for those on the go.
Their upcoming location will be at the Culebra Commons shopping center, with plans to finish construction by late July. The founders are driven by a passion for health, especially in a region that struggles with high rates of diabetes, obesity, and heart disease.
Velasco and Guerra noticed that many people in their community had limited access to fresh food. Fast food was everywhere, but healthier options were scarce. They wanted to make nutritious food easy to grab, coining their mission as providing “real food for real people.” Velasco, who comes from a fitness background, believes that healthy food should be accessible, especially for busy lives.
Similar health challenges exist in San Antonio, with diabetes rates 10% higher than the national average. As of 2022, one in six people in San Antonio has Type 2 diabetes, and a third of the population is prediabetic, according to the University of Texas at San Antonio Health Science Center.
At Fork to Fit, they emphasize a balance of macronutrients—proteins, carbohydrates, and fats—that people need every day. Their website even has a calculator to help customers set and achieve their fitness goals.
The menu features global flavors, including shrimp scampi and Tex-Mex steak and eggs. Velasco aims to provide delicious options without compromising on nutrition or convenience. All meals are prepared fresh daily, and drink offerings include coffee and matcha.
As Fork to Fit Kitchen expands, it aims to meet the growing demand for healthier, fast food options. With ten locations mainly in McAllen, this chain is proving that nutritious meals can be both quick and satisfying.
